- 3 eggs
- 1 c. sugar
- 2/3 c. canned pumpkin
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
Directions

1In a large bowl, combine eggs and sugar, beating well.

2Add pumpkin, mixing until blended.

3In a separate bowl, combine flour, baking powder, spices and salt.

4Add to egg mixture, mixing well. Spread batter into a greased and wax paper lined 10 x 15-inch jelly roll pan.

5Bake at 375° for 15 minutes.

6Remove from pan. Cool for 15 minutes.

7Place cake on clean tea towel.

8Cool 10 minutes longer.

9From 10-inch side, roll cake up in towel.

10Set aside.

11Meantime, prepare filling.
