- 70 grams puy lentils
- 1 tablespoon olive oil
- 1 onion chopped
- 1 clove garlic chopped
- 1 carrot diced
- 1 stick celery sliced
- 2 teaspoons dried thyme
- 1 cup vegetable stock
- 1 tablespoon ketchup
- 1 teaspoon sherry vinegar
- salt
- pepper
Directions

1Boil the puy lentils in a cup of water for 25 minutes

2Heat oil in a pan, saute onions and garlic for 2 minutes

3Add celery, carrots, stock and thyme and cook for 15 minutes

4Drain cooked puy lentils and add to the carrots

5Add ketchup, season with salt and pepper, and vinegar

6Cook for 10 minutes until all the liquid has evaporated
