  • 70 grams puy lentils
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 clove garlic chopped
  • 1 carrot diced
  • 1 stick celery sliced
  • 2 teaspoons dried thyme
  • 1 cup vegetable stock
  • 1 tablespoon ketchup
  • 1 teaspoon sherry vinegar
  • salt
  • pepper

Directions

    Boil the puy lentils in a cup of water for 25 minutes

    Heat oil in a pan, saute onions and garlic for 2 minutes

    Add celery, carrots, stock and thyme and cook for 15 minutes

    Drain cooked puy lentils and add to the carrots

    Add ketchup, season with salt and pepper, and vinegar

    Cook for 10 minutes until all the liquid has evaporated
