Quail With Blueberries

- 8 quail
- oil
- lemon juice
- salt and pepper
- 4 c. blueberries
- 4 tsp. sugar
- 8 Tbsp. butter
- 4 cloves garlic, minced
- 8 bay leaves
Directions

1Rub quail generously inside and out with a mixture of oil and lemon juice.

2Season with salt and pepper.

3Stuff each quail with 1/2 cup blueberries and 1/2 teaspoon sugar.

4Close with skewers or thread.

5Place each on square of aluminum foil, large enough to fold well.

6Melt butter, add to minced garlic and bay leaves. Pour equal amount of mixture over each bird. Wrap loosely and fold edges to seal.

7Roast, breast down, in 425° oven for 1 hour or until tender.

8Serve with juice.
