  • 1 bought 9-inch pie shell
  • 2 fresh tomatoes
  • salt, pepper, flour
  • 2 Tbsp. oil
  • 1 c. chopped onions
  • 3 slices Provolone cheese, broken into bite-size
  • 2 eggs, beaten
  • 3/4 c. heavy cream
  • 1 c. grated Swiss cheese

Directions

    Brown pie shell in 350° oven for 5 minutes. Peel and slice tomatoes. Salt and pepper and dip in flour.

    Saut in oil. Remove and drain. Place tomatoes and onions in bottom of pie crust; place Provolone cheese. Mix cream and eggs together. Pour into pie shell. Sprinkle Swiss cheese on top. Bake at 375° for 35 to 40 minutes.
