- pastry for single crust pie
- 3 beaten eggs
- 1 1/2 c. milk
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 8 slices bacon, cooked (save 2 Tbsp. drippings)
- 1 medium onion, sliced
- 1 1/2 c. shredded Swiss cheese
- 1 Tbsp. flour
Directions

1Bake pie crust at 450° for 10 minutes.

2In bowl stir together eggs, milk, onion, salt, and pepper.

3In skillet, fry bacon, drain, reserving 2 tablespoons drippings.

4Cook onion in drippings until tender.

5Add crumbled bacon and onion to egg mixture.

6Toss together cheese and flour and add to egg mixture.

7Pour into hot pastry shell.

8Bake at 325° for 35 to 40 minutes.

9Serves 6.
