- 1 pie crust
- 8 pieces cooked vegetarian bacon or 4 sausage patties
- 4 eggs or the equivalent egg substitute
- 1 1/2 c. heavy cream
- 1 c. grated cheese (Swiss or Cheddar)
- 3/4 tsp. salt
Directions

1Flour both sides of pie crust, place in ungreased pie plate. Cook in 350° oven about 10 to 15 minutes, long enough so bottom of crust is slightly precooked.

2This avoids a soggy crust.

3Crumble bacon or sausage into small pieces.

4Beat eggs, cream and salt. Stir in cheese and bacon/sausage.

5Pour mixture into crust.

6Bake 20 minutes in 450° oven.

7Turn oven down to 350°, bake 30 more minutes.

8Quiche is cooked when knife inserted in center comes out clean.

9Let stand 10 minutes before serving.
