- 1 1/4 c. all-purpose flour
- 1/3 c. butter
- 2 Tbsp. ice water
- 3 eggs
- 1 1/4 c. whipping cream
- 1 tsp. mixed herbs
- dash of black pepper
- dash of salt
- 1 c. diced smoked ham
- 1 1/2 c. grated Cheddar or Jarlsberg cheese
- dash of paprika
Directions

1Measure flour into a bowl.

2Cut in butter with a pastry blender until coarse crumbs form.

3Add ice water, mixing with a fork until dough forms a ball.

4Wrap.

5Chill for 1 hour.

6Roll dough out to fit bottom and sides of a 9-inch quiche pan.

7Prick dough with a fork.

8Bake pie shell at 425° for about 10 minutes.
