- 1 pie crust, baked
- 1/3 c. oil
- 2 medium tomatoes
- 2 Tbsp. chopped parsley
- 3/4 c. heavy cream or whipping cream
- 1/4 c. chopped onion
- 1 small eggplant, cut into 1/2-inch cubes
- 1/4 tsp. basil
- 3 eggs
- 3 Tbsp. Parmesan cheese
Directions

1Preheat oven to 400°.

2Saute onion and eggplant in oil until tender, about 5 to 10 minutes.

3Add tomatoes, parsley and basil. Cook 5 minutes longer.

4Spoon mixture into pie shell.

5Mix cream, eggs, cheese and 3/4 teaspoon of salt until blended.

6Pour over tomato mixture.

7Bake 25 to 30 minutes or until done.
