- 1 (10-inch) baked pie shell
- 1 medium onion, sliced
- 1/2 c. chopped green pepper
- 1/2 c. mushrooms
- 1 Tbsp. oil
- 1 (10 oz.) pkg. spinach
- 6 to 8 slices bacon, fried and crumbled
- 1/2 to 1 c. grated cheese
- 1 Tbsp. snipped parsley
- 1/4 tsp. pepper
- 1 tsp. garlic salt
- 1/2 tsp. basil leaves, crushed
- 6 eggs
- 1 Tbsp. flour
- 1 1/2 c. milk or half and half
Directions

1In a skillet over medium heat, saute onion, green pepper and mushrooms in oil.

2Cook spinach by directions on package; drain well.

3Beat together eggs, flour and milk until well blended.

4Add vegetables, garlic salt, basil and pepper.

5Spread bacon and grated cheese over pie shell in pan.

6Pour other ingredients over cheese and bacon.

7Bake in preheated 375° oven until knife inserted near center comes out clean, 30 to 35 minutes.

8Let stand 5 minutes before serving.
