Quick Cherry Crunch

Ingredients

  • 1/2 c. cherry juice
  • 1 1/2 tsp. quick tapioca
  • 1/2 c. butter or margarine
  • 1 to 1 1/2 c. brown sugar
  • 1 c. flour
  • 1 c. quick oatmeal
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1/4 tsp. soda
  • 2 c. drained canned red cherries

Directions

    Preheat oven to 350°.

    Mix juice and tapioca and let set 15 minutes. In a large pan, melt butter.

    Stir in sugar, flour, oatmeal, salt, baking powder and soda.

    Place 1/2 mixture in bottom of 9 x 9 x 2-inch pan.

    Layer cherries on top of this layer.

    Pour on cherry juice and tapioca mixture.

    Top with remaining sugar and oatmeal mixture.

    Bake 30 to 35 minutes or until brown.
