Quick Chicken Tarragon

  • 4 boned and skinned chicken breast halves
  • 1 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1 c. flour (for coating chicken)
  • 1 (8 oz.) can mushrooms
  • 3 Tbsp. olive oil and butter
  • 1 lemon, squeezed
  • 1 tsp. tarragon

Directions

    Coat chicken with flour.

    Brown chicken breast in large skillet on high heat in olive oil and butter.

    (When the oil and butter begins to turn brown, add the chicken.) Cook for 4 minutes on each side.

    Pour sauce over chicken.

    Serve over rice and steamed broccoli.
