- 4 medium Potatoes
- 3 Spring Onions
- 2 tblsp Flour
- 1 Egg
Directions

1Grate potatoes and drain in a sieve for 20 minutes.

2Squeeze well to remove any excess moisture.

3Finely chop spring onions and mix with potatoes, flour and egg.

4Season well.

5Form into cakes and fry in a little oil.

6Press down on cakes with a spatula while cooking. Turn when brown and crispy, then cook other side the same.

7Eat while hot.
