Quick Hot Cross Buns

Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 3 Tbsp. applesauce
  • 3 Tbsp. margarine
  • 1/4 c. currants or raisins
  • 1 1/4 c. cottage cheese
  • 1/4 c. fruit cake mix (candied fruit)
  • 1 egg
  • 1/2 tsp. vanilla
  • 1/2 c. confectioners sugar
  • 1/8 tsp. vanilla
  • 2 1/2 to 3 tsp. milk

Directions

    Combine flour, sugar, baking powder, baking soda, salt and cinnamon.

    Cut in margarine until mixture resembles coarse crumbs. Stir in raisins (or currants) and mixed fruit.

    Combine cottage cheese, egg and 1/2 teaspoon vanilla; beat until almost smooth. Add flour mixture; mix well.

    Knead dough on slightly floured surface 10 times.

    Shape dough into 12 balls.

    Place on greased cookie sheet.

    Bake in a preheated 425° oven for 18 to 20 minutes, or until toothpick inserted in center comes out clean.

    Cool. When cooled, make glaze by combining confectioners sugar, 1/8 teaspoon vanilla and milk; mix well.

    Make a cross on top of each bun with glaze.
