- 1 (10 1/2 oz.) can chicken broth
- 1 c. cauliflower flowerets
- 1/3 c. shredded carrots
- 1 1/4 c. quick cooking rice (uncooked)
- 2 tsp. lemon juice
Directions

1Heat broth to boiling.

2Add broccoli and carrots.

3Return to boil.

4Reduce heat to low; cover.

5Cook 5 minutes or until vegetables are tender.

6Stir in rice and lemon juice.

7Remove from heat and cover.

8Let stand 5 minutes or until liquid is absorbed.

9Fluff rice with fork before serving.
