Quick Lemon Pepper Chicken

  • 5 to 6 pieces boneless thin chicken breasts
  • 2 Tbsp. canola oil or other
  • salt and pepper
  • 1 fresh lemon
  • 1 can cream of chicken soup
  • 2/3 c. milk
  • white rice (instant or boil in bag)

Directions

    Pour oil to cover bottom of a large skillet and cook both sides of chicken over medium heat.

    Salt and pepper both sides. Cook approximately 5 minutes, until brown.

    At the same time, boil rice according to directions.

    Remove chicken from pan and drain grease.
