Quick Macaroni And Cheese

Ingredients
- 1 1/2 c. elbow macaroni
- 3 Tbsp. margarine or butter
- 1/4 c. finely chopped onion
- 1/2 c. tomatoes (canned or fresh)
- 1 (1/2 lb.) pkg. Velveeta cheese (use as much cheese as you like)
Directions

1Cook macaroni as directed on package.

2In a 1 1/2 quart casserole, cook onion and butter in microwave on Medium-high for 1 to 2 minutes or until onions appear transparent.

3Cube Velveeta cheese and cut up tomatoes.

4Add all ingredients to casserole with onions.

5Stir to mix.

6Microwave on Medium-high heat for 2 to 3 minute intervals (stir in between) until cheese is melted.

7Serve with Italian bread.

8Makes 6 servings.
