Ingredients
- 1 Tbsp. olive oil
- half chopped onion
- 1 stalk celery finely chopped
- 2 carrots grated
- 1/2 c. quinoa
- 1 c. water or veg.or chicken stock
- 1 bay leaf
- grated rind of 1 med. lemon
- 1 Tbsp. fresh lemon juice
- 1/2 c. frozen peas
Directions

1Heat oil in non stick pan. Cook onion, celery & carrot for 10 min, stirring occassionally.

2Rinse quinoa in a strainer under cold water, drain and add to pan. Cook , stirring 1 min.

3Add water, bay leaf, lemon rind & juice & bring to boil. Cover, and simmer for 15-20 min. Discard bay leaf and add peas. season with salt & pepper to taste.
