Quinoa Pilaf

Ingredients

  • 1 Tbsp. olive oil
  • half chopped onion
  • 1 stalk celery finely chopped
  • 2 carrots grated
  • 1/2 c. quinoa
  • 1 c. water or veg.or chicken stock
  • 1 bay leaf
  • grated rind of 1 med. lemon
  • 1 Tbsp. fresh lemon juice
  • 1/2 c. frozen peas

Directions

    Heat oil in non stick pan. Cook onion, celery & carrot for 10 min, stirring occassionally.

    Rinse quinoa in a strainer under cold water, drain and add to pan. Cook , stirring 1 min.

    Add water, bay leaf, lemon rind & juice & bring to boil. Cover, and simmer for 15-20 min. Discard bay leaf and add peas. season with salt & pepper to taste.
