Quinoa salad

Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1 bay leaf
  • 3 tomatoes
  • 1 bunch Spring onions
  • 1 lime
  • 1 tbsp. olive oil
  • to taste Salt and pepper

Directions

    Cook the quinoa in a saucepan according to the instructions on the packet.

    Wash the onions and tomatoes.
  3. 3
    I'm in Portugal this week and was amazed by all the sizes and colours of the tomatoes in the market - couldn't resist buying one of each kind to try them all.

    These are just three of them, but any tomato is fine of course

    Put the quinoa in a bowl and squeeze the juice of the lime.

    Mix well.

    Add the chopped onions

    Chop and add the tomatoes.

    And finally add some oregano and the spoonful of olive oil.

    Mix well, taste, add salt and pepper accordingly.

    Put into a serving dish and enjoy :-)
