Rainbow Bean Soup

Ingredients
- 4 cloves crushed garlic
- 10 c. water or stock
- 2 diced carrots
- 2 c. crushed tomatoes
- 2 chopped onions
- 1 diced green pepper
- 1 tsp. dried parsley
- 1/4 c. lime juice
- 1 tsp. chili powder
- 1/4 c. chopped fresh cilantro
- 1 bag various dried beans (10 bean variety)
Directions

1Soak beans overnight; drain and put into soup pot with garlic and water or stock.

2Bring to boil; simmer for 1 1/2 hours.

3Add carrots; simmer 1 more hour.

4Add tomatoes, onions, green pepper, parsley, lime juice and chili powder.

5Cook for 30 minutes.

6Stir in cilantro and salt and pepper to taste.

7Serves 8.
