Rainbow Pasta Dinner

Ingredients

  • 1 (8 oz.) pkg. rainbow spirals or curlies
  • 1/3 c. chopped red bell pepper (1/2 small)
  • 4 carrots, peeled and shredded
  • 1 c. frozen peas, partially thawed
  • 2 scallions, chopped
  • 1 celery rib, chopped
  • 1 c. diced cooked chicken, turkey or ham
  • 1/2 to 3/4 c. Italian dressing
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 6 c. shredded lettuce

Directions

    In a large pot of boiling salted water, cook pasta until just tender, 8 to 10 minutes.

    Drain, then rinse with cold water and drain again.

    Transfer to a large bowl.

    Add all remaining ingredients except lettuce to pasta.

    Toss to blend well.

    Serve at room temperature or chilled on a bed of shredded lettuce.
