Rainbow Pasta Dinner

Ingredients
- 1 (8 oz.) pkg. rainbow spirals or curlies
- 1/3 c. chopped red bell pepper (1/2 small)
- 4 carrots, peeled and shredded
- 1 c. frozen peas, partially thawed
- 2 scallions, chopped
- 1 celery rib, chopped
- 1 c. diced cooked chicken, turkey or ham
- 1/2 to 3/4 c. Italian dressing
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 6 c. shredded lettuce
Directions

1In a large pot of boiling salted water, cook pasta until just tender, 8 to 10 minutes.

2Drain, then rinse with cold water and drain again.

3Transfer to a large bowl.

4Add all remaining ingredients except lettuce to pasta.

5Toss to blend well.

6Serve at room temperature or chilled on a bed of shredded lettuce.
