Ingredients
- 4 eggs
- 1/4 lb. shortening (lard; 4 oz. melted equals 1/2 c.)
- 1/2 lb. sugar (8 oz. equals 1 c.)
- 1 yeast cake dissolved in 1/4 c. warm water
- 1 1/2 pt. warm milk (3 c.)
- 2 lb. plus 12 oz. flour (weigh)
Directions

1First dissolve yeast cake in warm water; set aside.

2Beat eggs, then add cooled melted lard; mix.

3Add sugar; mix.

4Add yeast and warm milk.

5Beat with heavy spoon.

6Next add half the flour; beat.

7Remainder of flour; beat.

8Set to raise overnight. When done raising, flour a little.

9Roll and shape in doughnuts, then rise again and fry them in fat.
