Raisin Nut Cake

  • 2 c. sifted flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 3/4 tsp. soda
  • 1 tsp. salt
  • 3/4 c. brown sugar, packed
  • 1/2 c. soft shortening
  • 1 c. buttermilk
  • 3 eggs (1/2 to 2/3 c.)
  • 1/2 c. cut up nuts
  • 1/2 c. cut up raisins

    Sift together flour, sugar, baking powder, soda and salt.

    Add brown sugar, shortening and buttermilk.

    Beat 2 minutes and then add eggs.

    Beat 2 more minutes.

    Fold in nuts and raisins.

    Pour into prepared pans.

    Bake until cake tests done.

    Cool.

    Spread with Egyptian filling.

    Bake at 350° (moderate oven) for 30 to 35 minutes for layers, 35 to 40 minutes for oblong cake.
