- 1 whole Large White Onion, Sliced Into Thin Strips
- 6 whole Roma Tomatoes, Diced
- 5 cloves Garlic, Minced
- 1 cube Chicken Bouillon
- 1 whole Bunch Cilantro, Diced
- 2 cups Oaxaca Cheese, Diced Into Small Squares
Directions

1Heat the oil in a large pan over medium heat. Add the poblano peppers, onions, tomatoes, garlic at the same time. Stir often. When everything is soft, add the chicken bouillon cube and cilantro to taste and stir. Once everything is incorporated, add the cheese and stir until melted. Fill tamales or use as a taco filling.
