- 2 cups pinto beans
- 8 cups hot water
- 12 onion, sliced
- 1 large garlic clove, sliced
- 8 slices bacon
- 4 medium tomatoes
- 2 ounces green chilies, diced
- 2 teaspoons salt

Directions

1Rinse beans in cold water.

2Place in 4-quart kettle.

3Add hot water, onion and garlic.

4Bring to a boil.

5Reduce heat.

6Partially cover and simmer 1 1/2 to 2 hrs., until tender.

7Add more water if needed.

8Fry bacon crisp, reserving 1 tablespoons of drippings.

9Crumble bacon.

10Peel tomatoes.

11Strain seeds and discard, saving juice.

12Chop pulp.

13Saute' tomatoes with juice and chiles in bacon drippings 10 minutes until reduced slightly.

14Add to beans.

15Add bacon.

16Cook, uncovered, 15-20 minutes to blend flavors.

17Add salt.

18Serve in small bowls as a meat accompaniment.
