Raspberry Bellini

  • 1-7/8 ounces, weight Raspberries
  • 2 Tablespoons Icing Sugar
  • 2 whole Mint Leaves
  • 1 bottle (750ml Bottle) Prosecco

Directions

    To make the bellini, in a food processor blend the raspberries with sugar and mint, then pass through a sieve. Spoon a teaspoon or tablespoon of raspberry puree in a champagne glass and top with chilled Prosecco. A few raspberries may be added for decoration. Serve immediately.
