Raspberry Carousel Salad

Ingredients

  • 1 pkg. raspberry Jell-O (3 oz.)
  • 2 c. hot water
  • 3/4 c. cranberry cocktail juice
  • 1 c. diced apples
  • 1/4 c. sliced celery
  • 1 (3 oz.) pkg. lemon Jell-O
  • 1/4 c. nuts
  • 4 1/2 oz. Cool Whip
  • 1/2 c. mayonnaise

    Dissolve raspberry Jell-O in 1 cup hot water.

    Add cranberry juice cocktail and chill until thickened (1 hour).

    Fold in apples, celery and nuts.

    Spoon into 6 cup mold and chill until set, about 15 minutes.

    Dissolve lemon Jell-O in remaining boiling water. Chill until slightly thickened, about 1 hour.

    Combine Cool Whip and mayonnaise; fold in Jell-O (lemon).

    Spoon on top of other mixture.

    Chill until firm, at least 4 hours.

    Unmold.
