Raspberry Peach Parfait

  • 1 (6 oz.) or 2 (3 oz.) pkg. raspberry gelatin
  • 2 c. boiling water
  • 12 large ice cubes
  • 1/2 c. heavy or light cream
  • 1 (16 oz.) can Del Monte lite yellow cling sliced peaches, drained
  • prepared whipped topping
  • mint sprigs (for garnish)

Directions

    Dissolve the gelatin in boiling water. Stir in ice cubes until dissolved.

    Reserve 3/4 cup dissolved gelatin. Divide among and pour remaining gelatin evenly into 6 dessert glasses.

    Chill.
