- 2 Eggplant
- 4 Zucchini
- 1 Green pepper
- 1 Onion (large)
- 2 clove Garlic
- 1 dash Parsley
- 1 dash Thyme
- 2 Bay leaf
- 1 dash Salt
- 1 dash Pepper
- 3 tbsp Olive oil
- 2 can Diced tomatoes (8 oz. can)
- 1 pinch Cinnamon
- 1 lb Ground Turkey
Directions

1Chop up onion and garlic cloves

2Saute chopped onions and garlic cloves in olive oil in a pot

3Add meat to the saute onions until meat is broken up (does not need to be fully cooked)

4Cut up vegetables and add them to the saute

5Add the rest of the ingredients to the pot and cook with lid on for 1.5 - 2 hours on medium heat
