- 3 green peppers, cut in strips or red, green, yellow
- 1 eggplant
- 4 zucchini, cubed
- 5 tomatoes or 1 large can tomatoes
- 1 to 2 Tbsp. fennel seed
- pepper and salt to taste
- 1/2 tsp. oregano
- 1/2 tsp. dill
- 1/4 c. lemon juice
Directions

1Saute onions; add peppers, eggplant and zucchini and cook for 5 minutes.

2Add remaining ingredients except lemon juice.

3Cover and cook 15 minutes, then sprinkle with lemon juice.
