Ingredients

  • 1/4 c. oil
  • 4 onions, sliced thin
  • 3 green peppers, cut in strips or red, green, yellow
  • 1 eggplant
  • 4 zucchini, cubed
  • 5 tomatoes or 1 large can tomatoes
  • 1 to 2 Tbsp. fennel seed
  • pepper and salt to taste
  • 1/2 tsp. oregano
  • 1/2 tsp. dill
  • 1/4 c. lemon juice

Directions

    Saute onions; add peppers, eggplant and zucchini and cook for 5 minutes.

    Add remaining ingredients except lemon juice.

    Cover and cook 15 minutes, then sprinkle with lemon juice.
