- 1/2 c. olive oil
- 3 cloves garlic, slivered
- 3 large onions, thinly sliced
- 4 green peppers, quartered
- 2 tsp. chopped parsley
- 1 tsp. basil
Directions

1In olive oil, starting with the garlic, saute until pale, then add onions and peppers.

3Simmer, covered, 45 minutes.

4Uncover, then simmer 15 more minutes to reduce water.
