- 5 pounds medium red-skinned potatoes
- 1 tablespoon salt, plus more to taste
- 1/2 cup (1 stick) butter, at room temperature
- 2 tablespoons milk
- Pepper to taste
Directions

1Peel the potatoes and cut them in 1-inch cubes.

2Place the potatoes and 1 tablespoon salt in a large saucepan with water to cover and bring to a boil.

3Reduce the heat and simmer the potatoes until very tender, about 30 minutes.

4(You can also cook the potatoes in a pressure cooker for about 5 minutes.)

5Drain the potatoes and transfer them to a large mixing bowl.

6Add the butter, milk, and salt and pepper to taste.

7Use an electric mixer or a hand mixer to whip the potatoes to a smooth texture, about 5 minutes.

8You shouldnt see any lumps.

9If you do, keep mixing!

10Serve immediately.
