Red Bean Salad

Ingredients

  • 2 (No. 3) cans beans
  • 1 medium onion
  • 1 c. celery
  • 1/2 c. pickles (dill)
  • 2 hard-boiled eggs
  • 2 heaping Tbsp. mayonnaise

Directions

    Cook red beans or use canned one (I prefer canned ones for this, as they stay whole better).

    Drain well.

    Add chopped onion, celery, pickle and finely chopped eggs.

    Toss with mayonnaise, salt and pepper to taste.

    May add a little Worcestershire and hot sauce, if desired.

    Great with barbecue of any kind.
