- 1 large red bell pepper
- 3 Tbsp. butter
- 1 tsp. olive oil
- 1/4 c. sliced scallions
- salt and freshly ground pepper
Directions

1Add rice to a large pot of boiling water.

3Boil for 12 minutes.

4Drain into a colander.
