- 1 c. onion, chopped
- 1 clove garlic, minced
- 2 Tbsp. margarine
- 2 Tbsp. olive oil
- 1 1/4 c. uncooked regular rice
- 1 (11 oz.) can tomatoes
- 1 (13 oz.) can chicken broth
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Saute onion and garlic in margarine and olive oil until soft in a medium-size saucepan.

2Stir in rice, tomatoes, broth, salt and pepper.

3Heat to boiling.

4Cover. Reduce heat and simmer 15 minutes or until rice is tender or liquid is absorbed.

5Fluff up rice and serve!
