Ingredients

  • 4 slices rye bread (crust removed)
  • butter or margarine
  • 1 (16 oz.) can sauerkraut
  • 3/4 lb. canned or cooked corned beef
  • 1/4 c. sour cream
  • 1/4 c. mayonnaise
  • 1 Tbsp. catsup
  • 4 square slices Swiss cheese, cut in half diagonally

Directions

    Tear bread into cubes and place in buttered 8 or 9-inch square baking dish or 8 x 12-inch pan.

    Dot with butter.

    Drain sauerkraut well, squeezing out liquid.

    Place over bread crumbs. Crumble corned beef and mix with sour cream, mayonnaise and catsup.

    Spoon over casserole.

    Bake, uncovered, at 350° for 25 minutes.

    Place cheese triangles on top of casserole and return to oven for 5 minutes or until cheese melts.

    Makes 6 servings.
