Ingredients

  • 8 oz. bacon, diced
  • 8 oz. butter
  • 4 oz. celery, diced
  • 4 1/2 oz. green onions
  • 10 oz. flour
  • 5 qt. water
  • 3 oz. chicken base
  • 1 oz. ham base
  • 1 (27 oz.) can sauerkraut, chopped
  • 12 oz. corned beef, cut
  • 1/2 oz. caraway seed
  • 8 oz. Swiss cheese (medium sliced)

Directions

    Cook bacon, do not drain.

    Add melted butter, celery and onions and saute for 2 minutes.

    Add flour until well blended, about 2 to 3 minutes.

    Remove from heat.

    Add water, chicken and ham base, sauerkraut, corned beef and caraway seeds.

    Heat and gently boil for 8 to 10 minutes.

    Add cheese and heat to simmering for 2 minutes, stirring constantly.
