Rhubarb And Ginger Soda Bread

  • 1 tbsp butter
  • 7 oz rhubarb, trimmed and finely chopped
  • 2 1/4 cups self-rising flour
  • 1/4 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground almonds
  • 2 tbsp finely chopped crystallized ginger
  • 1/3 cup plus 2 tbsp sugar
  • 1 cup milk, approximately

Directions

    Melt butter in small saucepan on medium heat. Cook rhubarb, stirring, for 5 mins, or until rhubarb is just tender. Cool.

    Sift flour, baking soda and cinnamon into large bowl. Stir in almonds, ginger, 1/3 cup sugar and rhubarb. Stir in enough milk to mix to a soft, sticky dough.

    Turn dough onto floured surface; knead until smooth. Divide dough in half. Place halves on greased baking pan. Shape into 6-inch rounds. Mark rounds into 8 wedges. Sprinkle with remaining 2 tbsp sugar.

    Bake for 20 mins or until golden brown and bottom sounds hollow when tapped. Serve damper warm in wedges with butter.
