Ingredients

  • 2 cups diced rhubarb
  • 3/4 cup diced apple
  • 1/2 cup dried cranberries
  • 1/4 cup finely chopped onion
  • 1 Tbsp grated orange peel
  • 1/4 cup water
  • 2 Tbsp honey
  • 1 Tbsp minced ginger
  • 1 teasp red-wine vinegar
  • 1 teasp orange juice
  • 1/4 teasp crushed red pepper

Directions

    Combine all ingredients in a saucepan, bring to a boil, stirring occassionally. Reduce heat to low, cover and simmer until tender, 3-6 minutes or more. Uncover and cook until thickened. Serve warm or cold.
