- rind of 2 oranges
- 3 Tbsp. water
- 2 c. sugar, divided
- 1 c. buttermilk
- 2 eggs
- 3 c. flour
- 1/4 tsp. salt
- 3 tsp. baking powder
- 1 1/2 c. rhubarb, cut fine
Directions

1Cut orange rind very fine.

2Cover with water.

3Cook until tender; drain.

4Add 3 tablespoons water and 1 cup sugar.

5Boil until thick; set aside.

6Combine buttermilk with remaining 1 cup sugar.

7Beat in eggs.

8Sift flour with salt and baking powder. Stir into egg mixture.

9Stir in rhubarb and orange rind.

10Pour into two greased 9 x 5-inch loaf pans.

11Bake in 350° oven for 45 minutes.
