Rhubarb Pie

  • 4 c. finely diced rhubarb
  • 2 c. sugar
  • 3 Tbsp. flour
  • 4 eggs, beaten

Directions

    Combine finely diced rhubarb and sugar; let set for 3 hours. Then add flour and eggs (beaten).

    Pour into pie shell and bake at 350° until firm.

    Use knife to test center.

    When knife comes out clean, it's done, about 35 to 40 minutes.
