- 2 c. sour cream
- 1 c. cream-style cottage cheese
- 1 large bay leaf, crushed
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 (4 oz.) cans green chilies, drained, halved lengthwise, leaving seeds in
- 2 c. sharp Cheddar cheese, grated
- chopped parsley
Directions

1Cook rice in 2 1/2 cups water and 1 teaspoon salt.

2Saute onion 5 minutes in butter.

3Remove from heat; add hot rice, sour cream, cottage cheese, bay leaf, salt and pepper; toss.

4Layer half rice mixture, chilies and grated cheese; repeat and sprinkle with parsley.
