  • 1/4 c. margarine
  • 1 onion, chopped
  • 4 c. cooked white rice
  • 2 c. sour cream
  • 1 c. cream-style cottage cheese
  • 1 large bay leaf, crushed
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 (4 oz.) cans green chilies, drained, halved lengthwise, leaving seeds in
  • 2 c. sharp Cheddar cheese, grated
  • chopped parsley

Directions

    Cook rice in 2 1/2 cups water and 1 teaspoon salt.

    Saute onion 5 minutes in butter.

    Remove from heat; add hot rice, sour cream, cottage cheese, bay leaf, salt and pepper; toss.

    Layer half rice mixture, chilies and grated cheese; repeat and sprinkle with parsley.
