- 6 slices bacon
- 1 (15 oz.) can black-eyed peas with jalapeno peppers
- 1 (16 oz.) can stewed tomatoes
- 2 c. uncooked instant rice
- 1 medium onion, sliced
Directions

1Fry bacon.

2Remove from pan and drain all but 2 tablespoons of oil.

3Mix the rest of ingredients in pan.

4Cook, stirring until well coated.

5Pour into 9 x 13-inch baking dish.

6Crumble bacon over top.

7Bake at 350° for 30 minutes or until bubbly.
