- 1 onion, chopped
- 1 bell pepper, chopped
- 1 stick butter
- 1 c. rice (2 or 3 c. cooked)
- 2 cans cream-style corn
- jalapeno pepper to taste
- grated cheese
Directions

1Cook rice.

2Saute onion and bell pepper in butter.

3Add cooked rice, corn and jalapeno pepper.

4Pour in casserole dish and top with grated cheese.

5Bake at 350° for 25 or 30 minutes.
