Rice-Apricot-Marshmallow Pudding

- 1/2 lb. dried apricots
- 3 c. cooked rice
- 18 to 24 marshmallows
- 1/4 c. sugar
- 1/4 c. honey
- 2 c. whipped cream (optional)
Directions

1Soak washed apricots overnight in enough water to cover.

2Cook slowly in same water until tender.

3Drain.

4Add honey and sugar to taste.

5Arrange a layer of hot rice, then apricots in a greased dish; sprinkle with a layer of marshmallows cut in quarters.

6Let brown in oven.

7Add second layer of rice, apricots and juice with marshmallows on top.

8Let brown in moderate oven.

9Serve hot or cold with whipped cream.
