- 1 cut-up fryer or pieces
- 4 Tbsp. butter or oleo
- 1 c. raw rice
- chopped onion
- chopped green pepper (optional)
- chopped pimento (optional)
- chicken broth
Directions

1Melt butter in large pan.

2Salt and pepper chicken; roll in butter.

3Brown with skin-side down.

4Bake 20 minutes in 450° oven. (If not brown enough, run under broiler for a few minutes.)

5Lift chicken out; pour rice, onion, pepper and pimento in pan.

6Stir and spread evenly.

7Place chicken on top; pour broth to cover rice.

8Cover.
-
9Bake in 350° oven for about 1 hour.
