- 1 c. rice
- 1 1/2 tsp. salt
- 2 c. boiling water
- 1 large onion, chopped
- 1/2 lb. Velveeta cheese
- 2 Tbsp. parsley flakes
- 2 eggs, beaten
- 2 c. milk
- 1/2 c. Wesson oil
Directions

1Cook rice in boiling water and salt, until dry.

2Chop onion, put in rice with eggs and parsley.

3Heat cheese in milk and oil over low heat until cheese melts.

4Bake in covered dish at 350° for 30 minutes.

5Stir 2 or 3 times.

6Uncover and bake 10 to 15 minutes.
