Rice Meatballs

Ingredients
- 1 lb. ground lean beef
- 1/2 c. evaporated milk
- 1 1/2 tsp. salt
- 1/2 c. raw rice (regular)
- 2 Tbsp. finely cut onion
- 1 can tomato sauce
- 1 1/2 c. water
Directions

1Mix ground beef, evaporated milk, raw rice, onion and 1 teaspoon salt in a bowl.

2With wet hands, shape meat mixture into 8 balls.

3Put balls into skillet, about 1/2 inch apart.

4Then mix tomato sauce, 1/2 teaspoon salt and water.

5Save 3/4 of this mixture for sauce.

6Pour rest over meatballs.

7Bring to boil, then cover tightly and cook over low heat 45 minutes.

8Turn meatballs twice while cooking.

9When meatballs are done, remove from skillet.

10Pour saved mixture into skillet and heat until steaming hot.

11Serve sauce with meatballs.
