- 2 tablespoons oil
- 1/2 cup chopped onion
- 1 cup rice
- 2 cups chicken stock
- 1 tablespoon chopped parsley
Directions

1Heat oil in a saucepan over medium heat.

2Cook onion until tender and stir in rice.

3Mix rice to coat and pour in chicken stock.

4Bring to a boil, cover and reduce heat to low.

5Cook for 20 minutes.

6Remove from heat and let stand 5 minutes.
