Ingredients

  • 1/2 c. butter or margarine
  • 1 large onion, chopped
  • 1 c. sliced fresh mushrooms or 16 oz. can sliced mushrooms, drained
  • 1/4 c. firmly chopped green pepper
  • 1 c. raw white rice
  • 2 c. canned chicken broth or chicken bouillon with water or substitute with beef
  • dash of dried thyme leaves

Directions

    Saute mushrooms, onion and green pepper in butter.

    Add remaining ingredients and stir together. Cover and cook 30 to 40 minutes at 350°.

    Serves 6.
