Rice Pudding

  • 1 c. rice
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 2 egg yolks
  • 1 can evaporated milk
  • 1 can water
  • 2 egg whites
  • 2 Tbsp. sugar

Directions

    Boil 1 cup of rice.

    Add evaporated milk, can of water, 1/2 cup sugar and vanilla.

    Blend together.

    Beat egg whites until stiff, adding sugar as needed (2 tablespoons sugar).

    Fold into Rice Pudding.

    Bake at 350° for 3/4 to 1 hour.
